In the world of over sanitation are restaurants getting a raw deal? Hygiene standards around the world have improved dramatically, and yet regulation seems to be getting tougher. A bit unfair really on the smaller owners. In the UK. hygiene inspectors have so many laws and rules to be implied they normally arrive in pairs, just in cause either one forgets anything. Are we all getting a bit paranoid about cleanliness? Many small owners must pay so much money in maintenance and cleaning, any profit they make must get gobbled up more eagerly than the food they produce. It would appear that many more establishments will go to wall this year and even the Worlds greatest restaurant EL Bulli in Madrid can not make it pay at 200 euro per head. So what chance the smaller man has is any ones guess.
